Cooktops

Electric cooktops use infrared energy to heat. The heat generated is concentrated, so there is little excess heat lost. This makes electric cooktops more efficient than gas which only transfer 50% of the heat generated into cooking food. However, gas cooktops provide instantaneous flame allowing for control in both high and low heat. Alternately, induction cooktops are more efficient, transferring 90% of the heat generated into cooking food because they work using a magnetic field between the cooktop and the pan causing the pan to heat up.
