In New Zealand, the primary cooktop options include gas, electric (ceramic), and induction. Each has distinct features:

Gas Cooktops: Offer immediate heat control and are compatible with all cookware types. However, they can be less energy-efficient and require proper ventilation due to open flames.

Electric Ceramic Cooktops: Feature a smooth, easy-to-clean surface. They are generally more affordable but may heat up and cool down slower than other types.

Induction Cooktops: Utilise electromagnetic fields to heat compatible cookware directly, resulting in faster cooking and higher energy efficiency. They remain relatively cool to the touch, enhancing safety. However, they require induction-compatible cookware and tend to have a higher upfront cost.

To check compatibility, place a magnet at the base of your cookware. If it sticks firmly, the cookware is suitable for induction cooking. Materials like cast iron and certain stainless steels are typically compatible, while aluminium, copper, and glass are not unless they have a magnetic layer added.

The standard cooktop width in New Zealand is 60cm, accommodating four cooking zones, which suffices for most households. For those who frequently cook multiple dishes simultaneously or entertain often, larger sizes like 75cm or 90cm, offering additional zones, might be more appropriate. It's essential to consider your cooking habits and available kitchen space when selecting a size.
