The vitreous enamel distinguishes this from the uncoated polished variant. While polished carbon steel requires seasoning, careful drying after each wash, and vigilance against rust, the enamel simply wipes clean. It is stable on gas, suitable for open flames, oven-safe for finishing, and resistant to the rust that can affect bare carbon steel.
Constructed in the traditional manner: pressed carbon steel, dimpled across the base, featuring two riveted handles that maintain their alignment under heat. The dimples serve a purpose beyond aesthetics — they reinforce the base of the pan to keep it flat during cooking and assist in evenly distributing the rice in the thin layer that defines paella.
For serving, a 34cm pan can accommodate approximately 5 portions of thin rice (the Valencian style), 7 portions at a medium depth, or 8 portions when stretched deeper for a more substantial dish.

Care
Hand wash with warm soapy water and dry thoroughly. Not suitable for the dishwasher. The enamel coating does not need seasoning. Avoid using metal utensils and abrasive scourers to protect the enamel surface.
Safety
Not compatible with induction cooktops. When using in the oven, ensure the pan is placed on a level shelf and use oven mitts when handling. When cooking over an open flame, use a stable burner stand or trivet to support the pan.
