The original. Garcima is the workshop in Valencia that most professional kitchens associate with paella, and this is the polished 28cm version — bare carbon steel designed for two servings of thin Valencian rice, perfect for a dinner-for-two on a single home burner.
Bare carbon steel is the material that has been essential to paella since its inception. It heats quickly, browns effectively, and develops a seasoned patina over time that creates the socarrat for which the dish is famous. However, it can rust if left wet — a trade-off for the bare-metal finish.
Constructed in the traditional manner: pressed carbon steel, dimpled on the base, with two riveted handles that maintain their alignment when heated. The dimples reinforce the bottom of the pan to keep it flat during cooking and assist the rice in settling into the thin, even layer that paella requires. A 28cm pan accommodates approximately 2 portions of thin Valencian rice, 3 at a medium depth, or 4 when stretched deeper for a more substantial dish.

Care
Season prior to first use: rinse, dry, apply a thin layer of vegetable oil, heat over medium until the oil just begins to smoke, cool, and wipe out. Repeat once or twice for a more robust seasoning. After each use, hand wash with warm water (avoid strong detergents that can strip the seasoning), dry immediately and thoroughly, then apply a light coat of oil before storing. Not dishwasher safe. Not oven safe.
Safety
Not suitable for induction cooktops or ovens. When cooking over an open flame, use a stable burner stand or trivet to support the pan. Always use oven mitts when handling the pan while hot.
