The original. Garcima is the workshop in Valencia that many professional kitchens associate with paella, and the Tabarca combines their traditional outdoor paella setup — the polished pan, the burner, the legs, the hose, and regulator — into a comprehensive kit ready for your next event.

The pan is a 50cm polished carbon steel model, an ideal size for serving fourteen portions of thin Valencian rice. The burner, measuring 40cm, features two concentric rings with independent controls, allowing you to adjust the heat across the pan as the dish progresses through its cooking stages. The sturdy 3-leg stand elevates the setup to 75cm — a convenient height for outdoor cooking in a courtyard or backyard. A regulator and hose are included in the kit, ready to be connected to a standard LPG gas bottle (bottle not included).

The polished pan will develop a dark seasoned surface over time — this surface is essential for creating the socarrat at the bottom and gives the crust that paella is famous for. Polished carbon steel requires seasoning before its first use and should be dried thoroughly after each wash to prevent rust.

Care

Hand wash the paella pan using warm soapy water, ensure it is dried thoroughly, and apply a light coat of oil after drying to season the surface and guard against rust. The burner and stand can be cleaned with a damp cloth. Not suitable for dishwasher use.

Safety

For outdoor use only. Connect solely to standard LPG gas bottles using the provided regulator and hose. Inspect all connections for leaks with soapy water before igniting. Keep flammable materials away from the burner during operation. Allow the burner and pan to cool completely before disassembling.
