The original. Garcima is the workshop in Valencia that many professional kitchens associate with paella, and this is the polished version of their smallest pan — 12cm in diameter, 2cm deep, featuring a black handle and a dimpled base for uniform heat distribution.
For serving: blinis, individual pancakes, single fried eggs, and tapas such as gambas al ajillo or chistorra. The polished carbon steel develops a seasoned surface over time that retains heat well for proper searing.

Care
Polished carbon steel requires a quick seasoning before its initial use: rinse, dry, apply a thin layer of vegetable oil, heat over medium until the oil just begins to smoke, cool down, and wipe out. After each use, hand wash with warm water, dry immediately and thoroughly, then apply a light coating of oil before storing. Not suitable for dishwasher use.
